Ingredients
- 1 1/3 c.
all-purpose flour
- 1/2 c.
unsweetened cocoa powder
- 1/4 tsp.
baking soda
- 1/4 tsp.
kosher salt
- 1/2 c.
unsalted butter, at room temp
- 1/2 c.
sugar
- 2 tbsp.
pure vanilla extract
- 1
large egg
- 25
marshmallows
Directions
- Step 1In a bowl, whisk together flour, cocoa, baking soda, and salt. Using an electric mixer, beat butter, sugar, and vanilla in a large bowl until fluffy, about 3 minutes. Beat in egg. Reduce speed to low and add flour mixture, mixing until just incorporated.
- Step 2Divide dough in half. Roll each half between 2 sheets parchment paper until ⅛ in. thick. Refrigerate until firm, at least 30 minutes.
- Step 3Line baking sheets with parchment. Cut out X and O shapes and transfer to prepared baking sheets. Reroll, chill, and cut scraps.
- Step 4Heat oven to 350°F. Bake, rotating baking sheets halfway through, until set, 8 to 10 minutes. Cool 5 minutes on baking sheets before transferring to wire racks to cool completely. Sandwich with marshmallow cutouts.
