Ingredients
- 1/2 c.
superfine sugar
- 2 1/2 c.
heavy cream
- 3 tbsp.
fresh lemon juice
- 2 tsp.
grated Meyer lemon zest
- 2 tbsp.
Meyer lemon juice
Blueberries, for serving
Directions
- Step 1In a saucepan on low, gently heat superfine sugar and 2 cups heavy cream until sugar has dissolved, then bring to a simmer and simmer 1 minute.
- Step 2Remove from heat and add fresh lemon juice, grated Meyer lemon zest, and Meyer lemon juice. Divide among four 8-oz ramekins or jars and refrigerate until set, about 2 hours.
- Step 3Whip 1/2 cup heavy cream to medium-stiff peaks. Spoon on top and sprinkle with blueberries and additional Meyer lemon zest.
